In his book “The Uncomplicated Vegan”, Chris Harris has brought up an awesome recipe for deviled tomatoes, as he puts it, and chegg salad. It serves perfectly as a side dish or as meal for itself. His recipe instructions are very clear to understand so you will have no problem to prepare it yourself in no time.

“Deviled Roma Tomatoes

10 Roma tomatoes, on the smaller side
2 cups chickpeas
1/4 cup nutritional yeast
1/2 teaspoon Indian black salt
1/8 teaspoon cumin
Paprika
1/2 cup vegan mayonnaise
2 tablespoons mustard of choice
1 tablespoon lemon juice

In a food processor, combine the chickpeas, nutritional yeast, black salt, cumin, vegan mayonnaise, the
mustard of your choice and lemon juice until you have a semi smooth, but still textured, filling. Prepare
the tomatoes by cutting them in half and removing the insides so you only have the shells. Fill each shell
with a rounded amount of filling and sprinkle with paprika. Chill before serving. The black salt is what
gives egg alternatives their taste and odor because it is made with a special mineral profile. Find it at
most health food stores or online.”
